New Faces at NSAC
Dr. Zhou Tao, Visiting Scientist Food Science & Technology
Dr. Zhou Tao, an Associate Professor with the Department of Food Science, Nanjing Normal University in Jiangsu, China, is conducting a six month sabbatical leave at NSAC. Dr. Zhou is investigating antimicrobial properties of isolated essential oils and isoprenoid compounds from fruits and aromatic plants to extend the shelf life of value-added food products. There is growing interest in identifying natural antimicrobial agents with minimal or no impact on minimally processed fresh produce and other food products. Dr. Vasantha Rupasinghe of the Department of Environmental Sciences is providing Dr. Tao with research facilities and guidance.
Dr Naciye Erkan, Post-Doctoral Fellow Food Chemistry
Dr. Naciye Erkan completed her Doctoral degree (2008) at the Department of Chemistry, Akdeniz University in Antalya, Turkey. Since September 2008, she has been working as a postdoctoral fellow of the Tree Fruit Bio-product Research Program under the supervision of Dr. Vasantha Rupasinghe, Department of Environmental Sciences. Dr. Erkan is investigating specific antioxidant properties of flavonoid and triterpenoid compounds isolated from tree fruits and their processing wastes. She has established extraction and isolation processes for some unique phytochemicals using column chromatography and crystallization techniques. Identification of the compounds is being conducted using mass spectrometry. Characterization of their antioxidant activity is being performed using various in-vitro assays and food model systems.
Ajit Pal Kaur Joshi, AIF Research Project Manager
Ajit Joshi has been hired by the Tree Fruit Bio-product Research Program as Research Project Manager of the AIF-funded project, “Value-added fruit products from the Annapolis Valley.” The project will examine new food and bio-products for the promotion of human health and wellness from underutilized bioresources. Assisting Dr. Vasantha Rupasinghe, Project Director, Joshi is responsible for coordination and facilitation of five research and development projects in collaboration with five rural industry partners. In 2008, she completed her M.Sc. at NSAC and completed a research project on development and evaluation of non-fried apple snacks. Joshi also holds a M.Sc.
